We are so very excited to announce that we have secured an authentic ex-cognac still from France! Our new still is an original French made, ex-cognac still that has been producing eau de vie in the Nouvelle-Aquitane region of France for decades.
Hand Made Copper Ex-Cognac Still
This beautiful, hand-made copper still is a classic charentaise alembic pot still, manufactured by our friends at the family owned company Chaudronnerie Cognacaise based in Cognac France, who are experts in the art of crafting these traditional French stills.
Our head distiller and managing director Holly travelled to Cognac to meet with the manufacturers and has been working very closely with their expert team to re-design elements of the traditional still to suit our modern technological requirements.
We produce our Base Spirit from Scratch right here at the Distillery
Here at Bass & Flinders Distillery, we produce our base spirit from scratch through distillation of 100% Victorian wine. On average we distill between 40-60K litres of wine a year and we're proud to say that up until this point our 300Lt workhorse has been pumping through all that volume on it's own!
Our new state-of-the-art traditional still, will now be used to distil all our Shiraz and Chardonnay wine, to produce the eau de vie base spirit for our entire product range.
